As the weather gets warmer, our bodies often crave foods that feel light, refreshing, and hydrating. This Wellness Wednesday, we are keeping it simple with a summer recipe that supports hydration, digestion, and energy: a Cooling Cucumber Watermelon Salad.


Watermelon and cucumber are both high in water, which makes them perfect for warmer days when staying hydrated is really important. This salad is naturally sweet, crisp, and refreshing, with a little mint and lime to brighten the flavor.


It is easy to make, would be something beautiful to serve, and it's a great reminder that wellness does not have to be complicated.

Cooling Cucumber Watermelon Salad Recipe


Ingredients


  • 3 cups watermelon, cubed

  • 1 large cucumber, sliced or cubed

  • 1/4 cup fresh mint leaves, chopped

  • Juice of 1 lime

  • 1 tablespoon extra virgin olive oil

  • 1/4 cup pumpkin seeds or chopped walnuts

  • Optional: 1/4 red onion, thinly sliced

  • Optional: 1/4 cup crumbled feta

  • Optional: Pinch of sea salt

  • Optional: Black pepper to taste


Directions


  1. Add the watermelon and cucumber to a large bowl.

  2. Sprinkle in the fresh mint.

  3. Drizzle with lime juice and olive oil.

  4. Add pumpkin seeds or walnuts for crunch.

  5. If using, add feta, sea salt, and black pepper.

  6. Toss lightly and serve cold.


Simple Wellness Tip


If you are serving this on a hot day, chill the watermelon and cucumber before mixing. You can also add extra mint or a few berries for more color and flavor.


This salad will pair great with grilled fish, chicken, chickpeas, or quinoa if you want to make it more filling.
